4 lb Chicken, cut up
Marinade:
1 c Chinese Soy Sauce, lite
Or Japanese Soy Sauce
1 c Dry Sherry
1 lg Garlic Cloves, minced
1 ts Fresh Ginger Root, minced
Sauce:
1/2 c Hoisin Sauce
1 c Dry Sherry
1/2 c Ketchup
1/4 c Brown Sugar, Packed
1 Garlic Clove, minced
Combine marinade ingredients and pour over chicken pieces in a shallow pan.
Marinate overnight, turning pieces occasionally if all the pieces are not
submerged in the marinade. Combine sauce ingredients and set aside. Remove
chicken from marinade and drain. Place chicken in a shallow baking pan and
cover with the sauce. Bake at 350 degrees for 45 minutes or until done,
turning only once. Baste several times while baking. 4 servings. Easy to
